Caesar Roasted Broccoli

We eat a lot of broccoli in my house. Almost always roasted with a big glug of olive oil and a Cajun spice blend I grew up eating on everything. As I branched out, trying different roasted broccoli versions for my family, this one was always a crowd favorite. The strong flavor of Caesar dressing pairs well with broccoli to please even the most hesitant of broccoli eaters. The freshness of the lemon juice really cuts through it all and brings the whole dish together. This recipe takes less than 10 minutes from start to finish and has a result I think the whole group will love, whether for a dinner party or a quick Tuesday night “get some veggies on the table” addition.

Caesar Roasted Broccoli

Ingredients

2 heads broccoli

¼ cup olive oil

½ cup Caesar dressing (¼ cup before roasting + ¼ cup after roasting)

1 lemon

¼ cup shredded Parmesan cheese

¼ cup panko breadcrumbs

Instructions

  1. Break broccoli heads into florets. If the florets are larger than bite size, cut them in half. Put broccoli in a large bowl.
  2. Add ¼ cup of olive oil to broccoli bowl. Stir to combine. 
  3. Add ¼ cup of Caesar dressing to broccoli bowl. Stir to combine. 
  4. Make sure your oven rack is on the highest setting. Turn the oven on to Broil High. 
  5. Broil your broccoli for 4-6 minutes, or until the broccoli just starts to have small black spots. 
  6. While you are waiting on your broccoli to broil, juice your lemon. 
  7. Combine ¼ cup Caesar dressing, ¼ cup parmesan cheese, ¼ cup panko breadcrumbs, and lemon juice in your large bowl you used for the broccoli earlier.  
  8. When your broccoli is done broiling, remove it from the oven and add it to your dressing bowl while it is still hot. 
  9. Stir to combine. Serve warm. 

Notes:

  • Try different times of broiling your broccoli. I like mine a little blackened and crispy, but others may prefer it a little under cooked and still crunchy. Figure out together what you prefer.
  • Try this with croutons instead of breadcrumbs.
  • This can also be done with ranch dressing.
  • 1/4 cup of olive oil may seem like a lot, but it really helps bring flavor and tenderness to the broccoli
