Wonderful Waffles

A hazard of the job of a recipe developer and culinary class instructor is that I am always trying new recipes. I am on the hunt for ways to simplify recipes for students and also ways to broaden their horizons. I want to find food that is yummy and also some recipes that may challenge their taste buds to explore the unknown. This leads to a busy, chaotic kitchen life for me, and I love it.

Sometimes though, I dream of simplifying my life in the kitchen. I dream of a structure where menu planning doesn’t feel like 20 moving parts, and we just have tacos on Tuesday, the same old pasta on Wednesdays. While I can’t manage this much structure with recipe testing, I do look for consistent recipes I turn to over and over again. Sometimes I get something so right, that I don’t need to change a thing about it or continuously tweak it to death trying to perfect it. I love these waffles and turn to them any time I get the craving for a crispy, fresh, from scratch waffle slathered in butter and syrup. Or whipped cream and strawberries if I’m feeling festive!

This waffle recipe is a classic that I will continue to make for years to come (until I come across something even more delicious!)

Waffles

Ingredients

10 Tablespoons butter

3 cups all purpose flour

2 Tablespoons baking powder

2 teaspoons salt

2 Tablespoons sugar

2 ½ cups whole milk

2 eggs

Instructions

  1. Heat your waffle iron. I like mine on a medium high setting to get it nice and crispy.
  2. Melt butter in a separate pot or in a bowl in the microwave. If microwaving, cut butter into small cubes and stir butter every 15 seconds so that it won’t explode in the microwave. 
  3. Combine your flour, baking powder, salt, and sugar in a large bowl. Stir to combine. 
  4. Add your milk, eggs, and butter and stir until just smooth (may be a little lumpy, but no visible dry spots).
  5. Spray non-stick spray on your hot waffle iron. Pour ¼ cup-1 cup of batter onto your waffle iron and cook until your waffle iron tells you it is done. Mine has a green light that turns on when it’s done. Don’t walk away! Stay near by so your waffle does not burn.
  6. Gently remove your waffle using tongs or a spatula. Ask a grown up for help with this task.
  7. Serve with warmed syrup, salted butter, whipped cream, peanut butter, sliced fruit, or whatever you like!

Notes

  • If you want to turn this into pancake batter, remove 4 Tablespoons of butter and just use 6 Tablespoons for the batter.
