I love these cute little quiche for two main reasons! First, the wonton mostly keeps the egg from sticking to your muffin tin and acts like a cupcake liner. Still be sure to spray liberally with cooking spray before putting the wonton in though! Second, I love that it adds variety to our morning routines. We get stuck offering the same things over and over, but offering these quiche with ingredients they’re familiar with can increase your kids food flexibility while ensuring they get a filling breakfast.
They are perfect to make for the week as an easy breakfast on the go. Try doubling the recipe and freezing half for an easy dinner or lunch box addition to pull out when the fridge is sparse.

Customize this quiche to fit your family’s preferences. We used bacon, mozzarella, frozen spinach, and red bell pepper. But feel free to use whatever meat and/or veggie your family prefers, or whatever you have lying around. I love how crispy the wonton wrappers get on the outside of this quiche, but you can always leave them out and use silicone cupcake liners or paper liners.
Mini Quiche
Ingredients
- 12 wonton wrappers
- 4 pieces already cooked bacon
- 1 cup shredded mozzarella cheese
- 6 eggs
- 1/4 cup whole milk
- pinch of salt
- black pepper to taste
Instructions
- Preheat oven to 350*F.
- Spray muffin tin with cooking spray. Press 1 wonton wrapper into each well of the muffin pan.
- Cut bacon into small strips with kitchen scissors.
- Add eggs, milk, salt, and pepper to a medium bowl and whisk to combine.
- Place a 1-2 teaspoons of both the cheese and bacon in the bottom of the wonton wrappers.
- Pour about 1/4 cup egg mixture on top of the bacon and cheese.
- Bake for 20 minutes, or until eggs are set.
Notes:
- Try this recipe with well like breakfast items first, like bacon, cooked breakfast sausage, hash browns, or diced ham. Then try more challenging additions like frozen spinach (thawed), diced red bell pepper, onions, or finely diced mushrooms. I also love making a variety of flavors and letting the kids choose and add their own toppings to a couple.
