Blueberry Oat Snack Balls

We love making a batch of these on the weekend to take in lunch boxes or eat at snack time. They are the perfect hunger buster. They are sweet, filling, and are packed with fiber, protein, and fat. All nutrients that can be tricky for little ones to get enough of during the day.

I love that they use fresh blueberries, which adds an element of brightness, but it does mean that they are better stored in the fridge and used within a week or two. They never last that long in my house! If they do end up lasting, you can freeze them on a parchment lined baking sheet and then once they are firm, put them in a zip top bag to keep on hand in the freezer when you need an emergency snack.

Kids 2-5 love dumping things that are pre-measured into the food processor. Just make sure the food processor is unplugged before you let anyone help.

Kids 5-8 can begin measuring on their own. Be sure to spray your measuring cup with non stick spray before measuring peanut butter and honey.

Kids 8+can do this recipe mostly on their own with adult supervision. If you have small cookie scoops, those are great for kids that don’t love getting their hands dirty.

Blueberry Oat Balls 

Ingredients 

2 ½ cups rolled oats 

1 cup peanut butter 

½ cup honey 

½ cup fresh blueberries 

2 Tablespoons chia seeds 

Instructions 

  1. Place all ingredients in food processor. Pulse until well combined, then mix on high until chunky mixture forms (about 30 seconds).  
  2. Roll into tablespoon sized balls, place on parchment lined baking sheet, and refrigerate until firm. 
  3. Store in air-tight container in fridge.  

Notes:  

  • Sometimes we do larger, 2-3 Tablespoon sized balls to change things up. Not sure why this is a hit, but it is!  
  •  If you don’t have a food processor or blender, you can mix these by hand and they are still delicious. I just like the oats broken down a bit. You can also use a blender to break down the oats to oat flour before -hand, and it will give a similar texture. I would also lightly blend the blueberries or smash them in a bowl (great kid activity!) if you have a blueberry-hesitant eater and are doing the hand mix method.  
  • If you want these to be more shelf stable, you can use dried blueberries instead.  
  • Words to describe blueberry oat balls: soft, sticky, cold, peanut butter scented, sweet, able to roll, small 
  • These oat balls make a great breakfast in a hurry, especially with a glass of milk to wash it down.
