If you’ve been following along True Family Food for a while, you know we’ve done Pizza, Movie, and Ice Cream Fridays for years now. It serves many purposes. By Friday, I am usually tired of being in the kitchen, and we often order take out pizza or do a frozen pizza. It also assures my kiddos that they will have access to a large portion of ice cream at least once a week. We started doing pizza and ice together when one of my kids seemed like they felt restricted and were obsessing a little about when they would get ice cream again. To help with that preoccupation, we started having it weekly. At first, every drop of ice cream was eaten, but you’d be surprised these days how much is often leftover. I like serving pizza with the ice cream, because it is generally liked and means most everyone will have something easy to put in their tummy along with the ice cream.

I like to switch things up, and when I have slightly more energy, or when I don’t even have the energy to grab take out, I make this pizza dough. It’s quick (the rise is only 10 minutes) and delicious. It makes a full quarter sheet pan, so the five of us can generally share it if we have fruit and a fresh veggie side. Throw whatever sauce you have on hand (for us it’s often pasta sauce, but that’s okay!) and your favorite toppings. Often we are putting leftover roasted veg and meat from the week.
Quick Pizza Dough
Ingredients
2 cups all purpose flour (300g)
¼ teaspoon salt
1 packet rapid rise instant yeast
1 cup warm water
1 Tablespoon olive oil
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Oil a quarter sheet pan (13 inches by 8 inches).
- Stir together all ingredients in a large bowl.
- Cover bowl with a dishcloth, plastic wrap, or paper towel and let rise in a warm place for 10 minutes.
- Flour a large cutting board or a clean counter top. Roll dough out into a 13 x 8 inch rectangle. Gently transfer the dough to your sheet pan.
- Top with sauce, cheese, and your favorite toppings.
- Bake at 400 degrees Fahrenheit for 10-12 minutes.
