These little chocolate bites remind me of something you can get from a large store in the individual packaged snack aisle. I like that I am creating less plastic and it’s a fun activity for the kids! They will know what a pomegranate looks like and how to get the arils out. For older kids, you can discuss why the arils sink in water, but the white pith floats (density).

Chocolate Pomegranate Drops
Ingredients
1/3 cup pomegranate arils
1 cup chocolate chips
1 Tablespoon coconut oil
1/4 cup coconut chips (not flakes)
Instructions
- Cut your pomegranate into four pieces. Separate the arils (seeds) from the white pith. This is easiest to do in a large bowl of water because the pith will float and the arils will sink. When you get it all separated, you can simply scoop the floating white pith out with a large spoon. This is a great task for 3-5 year olds!
- Spread a large piece of parchment paper on the counter.
- Add your 1 cup chocolate chips and 1 Tablespoon coconut oil to a medium, microwave safe bowl.
- Microwave on 50% power for 30 seconds. Stir. Microwave again on 50% power for 30 seconds. Stir. Continue until your chocolate chips are melted.
- Pour a Tablespoon sized scoop of melted chocolate on your parchment paper and immediately poke in 2-3 pomegranate arils and 2-3 coconut chips.
- Let dry. Store in the fridge. If you need to stack them in a container, separate layers by a piece of parchment paper.
