Fruit Nachos

A yummy, easy treat! I love this recipe with peaches. You can use fresh during the summer peach season, or frozen all year long for a perfectly balanced snack. With peach nachos, you flip the script and the peaches become your “chips”.

Fruit Nachos

Ingredients

2 cups peaches (fresh or frozen work best)

1 cup plain whole milk yogurt

1 lemon

1  teaspoon vanilla extract

¼ cup chocolate chips

¼ cup pepitas or sunflower seeds

Instructions

  1. If your peaches are not already sliced, slice them. 
  2. Add your yogurt to a small bowl. 
  3. Zest your lemon into your yogurt. 
  4. Slice your lemon in half and squeeze the juice into your yogurt. If a seed falls in, just scoop it out with a spoon! 
  5. Add your vanilla to your yogurt and stir to combine. 
  6. Arrange your peach slices on a plate in a single layer. 
  7. Drizzle your yogurt mixture on top of the peach slices. This will act like yummy glue for your toppings. 
  8. Sprinkle your nachos with chocolate chips and seeds. 

Notes:

  • Try these nachos with apple slices instead of peaches.
  • Try a scoop of peanut butter in the yogurt dip instead of the lemon juice.
  • Use half yogurt and half chocolate hazelnut spread for your dip.
