This is installment two of “ignoring the clear signs of winter around me”. We used our Fresh Squeezed Lemonade from last week to make some popsicles. We are getting small snow flurries this week, but my brain has already completely moved on from winter. I’m ready for farmer’s markets, biking around town, and Picnic Thursdays.

I love having a cold treat during hot summer months, but I don’t love all the sugar and food dyes that get loaded into packaged popscicles. Sure, there are brands with less sugar and no dyes, but you’re going to pay a premium for those. Why not make them at home? We tend to make them once a week or so during the summer. That way, we always have a flavor or two hanging around in the freezer.
3 Ingredient Strawberry Lemonade Popsicles
Ingredients
2 cups frozen strawberries
1 Tablespoon water
1 Tablespoon sugar
2 cups lemonade (look for low sugar options or make your own)
Instructions
- Blend together frozen strawberries, water, and sugar until smooth.
- Add strawberry mixture to bottom of popsicle mold and freeze for 20 minutes, or until firm.
- Pour lemonade on top and freeze until hard.
Note: You can also add lemonade directly to the strawberries, blend, and freeze. This would would eliminate the need for sugar and extra water. We just wanted a striped look for this popsicle, but have done it both ways.
