We are officially moved into our new house! Boxes are everywhere and we can’t find anything, but we are already enjoying our new city. I got to sneak away to the farmer’s market on Saturday, and it was incredible. It was exactly how I always imagined a farmer’s market should be based on how they look in movies. I was on a mission and didn’t doddle like I wanted to, but even only seeing the first few stands was wonderful. My mission: peaches and tomatoes. Did you know it’s peach month? It is where we live, and they did not disappoint. I got a half case and have been working through them eating several peaches a day. Both the 3 year old and the baby have been enjoying them as well. They are juicy and custardy and perfect all by themselves. We are starting to get a few bruised spots now that we’ve had them for a few days, so it’s baking time!

I spent way too long looking for my spices this morning, and only found half of what I needed, but we made it work. These oat cakes were incredible. Filling, sweet, caramelized, and yummy. I will definitely be making these again. If it is not peach month where you are, frozen peaches would work fine. I would also try canned peaches in 100% juice.

You can make oat flour by blending either old fashioned or quick cooking oats in your blender. We blitzed these first and then simply rinsed our food processor and pureed the peaches.

Cinnamon Peach Oat Cakes
Ingredients
1 cup oat flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
2 Tablespoons coconut oil, melted
1 Tablespoon honey
1 teaspoon vanilla
1 egg
1 cup peach puree
1/2 peach, sliced thin
Instructions
- Mix oat flour, cinnamon, salt, baking soda, and baking powder in small bowl.
- Mix coconut oil, honey, vanilla, egg, and peach puree in large bowl.
- Add dry ingredients to wet.
- Heat skillet on medium heat.
- Scoop 1/4 cup of batter into skillet. Spread out with spatula and place peach slice on top.
- Cook until browned on both sides and peach is caramelized.
- Serve warm.
