No Bake Cereal Bars

Hopefully this is the last recipe that comes from our Air Bnb kitchen. We are counting down the days until we get to move into our new house next weekend!

There are a few things I have loved about our little stint in our home away from home. There is a beautiful park close to us that has a large pond full of geese and ducks with walking paths all around. It also has a sand volleyball court that is the toddler’s favorite part. Every day, she asks to go to the “sand park”. She fills up plastic cups with her sand shovel (weird things got left out of the moving POD) and makes little sand castles and (groan) sand angles. I think it is her favorite part of living here for the month. I love that we get out and go on a walk to the park twice a day. Once in the morning after breakfast, and once after dinner. It’s wonderful not to have to worry about mosquitoes coming out in the evening. Another cool thing about our home away from home is that they have one of the world’s largest steam engines here. The three year old was pretty excited to see that. It’s called “Big Boy” and it really is enormous. I can’t imagine it actually moving at speed.

We walked around the cute downtown area for our morning excursion over the weekend. They had a little trolley bus (perfect for our Daniel Tiger lover), a Women of the Wild West Museum with a window exhibit, and a mural celebrating women’s suffrage.

In between our adventures, Eloise helped me make these no bake cereal bars. We used some classic favorites: peanut butter, gluten free pretzels, and Cheerios, with some chia seeds and ground flax added in. They were easy and a perfect recipe for tiny hands to help with.

My three year old measured and added all of the dry ingredients. She enjoyed adding the pretzels to a zip loc bag and then crushing them with her feet. She then helped scrape the peanut butter off the spoon into the measuring cup.

We added the peanut butter to a 1 cup measuring cup, just filling 3/4 of the way, and then added honey to fill. That way, only one measuring cup got sticky.

We used a muffin tin, but you could also use an 8″x8″ pan lined with parchment pan and cut them once set. Make sure, whatever pan you use, press the mixture down to ensure it holds together well.

They came out well, and the muffin tins made it more exciting. The three year old liked the concept of Cheerio muffins. Big win for her.

No Bake Cereal Bars

Ingredients

3 cups toasted oat cereal

1/4 cup crushed gluten free pretzels

1 Tablespoon chia seeds

1 teaspoon ground flax seeds

3/4 cup peanut butter

1/4 cup honey

Instructions

1. Mix cereal, chia seeds, and ground flax in a medium bowl.

2. Mix together peanut butter and honey in a small heavy bottomed pot. Heat on low until mixture smooth and thinned.

3. Add peanut butter mixture to cereal mixture and stir until combined.

4. Press mixture into cupcake pans and refrigerate for an hour or until firm.
