Marinated Grilled Vegetables

It is full on 90+ temperatures every day here in Texas, which means you can usually find us at the pool. During COVID, that means our backyard. We’ve got a large blow up pool for the toddler (is 3 1/2 a toddler? I guess not) and the baby pool for the little one. The girls are little fish are could swim and splash all day. Our routine has been to go right after nap time when the water has had time to warm up during the day, and the shade has made its way to cover the back yard.

Summertime means ribs in the smoker, smores on the fire pit, and grilling! Grilling lets me stay outside with the family while they’re having fun and keep an eye on dinner. Plus, it’s delicious. Win-win-win!

These easy grilled, marinated veggies are a great addition to pretty much anything you want to throw on the grill. Last night, we had them with grilled chicken and Basmati rice. The veggies were easily my favorite part and my dad and I jousted for the last red onion bites.

They are super easy to prepare, and you can have them marinating while you grill your protein. The best way to reduce the amount of marinade you need is to put it all in a gallon ziploc bag. This helps the marinade stay close to the vegetables without needing to fill a whole bowl. That being said, I just used a large bowl last night and it worked well too.

For the grilling, I like this pan because it’s sturdy and stores better than the baskets, but any grill pan will work. Just make sure your holes are small enough for the vegetables you’re putting in. If your holes are too big, try covering it in aluminum foil and poking smaller holes all over. We don’t want any yummy, blistered cherry tomatoes escaping!

Grilled Marinated Vegetables

Ingredients

1/4 cup avocado oil

2 Tablespoons apple cider vinegar

2 teaspoons garlic powder

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4-6 cups fresh, sturdy chopped vegetables

Instructions

  1. Toss chopped veggies with oil in large bowl.
  2. Mix spices together in small bowl and sprinkle over oiled veggies.
  3. Spread out on grill pan. Grill on low for 5 minutes or until blistered and slightly blackened.
