
We’ve been trying different popsicle flavors at our house lately. I love the simplicity of them. I love how excited my toddler is to make them. I love how excited she is to go outside and eat them. We’ve been having a popsicle snack when the 3 year old wakes up from her nap. We make them in the morning, and then they are ready by the afternoon.

Her favorite has been these insanely easy, unsweetened strawberry banana ones. I like how creamy they get with the frozen banana and full fat coconut milk. I also like the added fat from the coconut milk. It helps plateau the sugar rush I get from straight fruit popsicles a little bit. The strawberries are so sweet, that I find it unnecessary to add any honey or sugar. We’ve started adding frozen fruit to our grocery list more often lately, because we are trying to make less trips to the grocery store. That way, when we run out of fresh fruit, we turn to the freezer. A perk of using frozen fruit is that they freeze faster, making them ready in just a few hours.
More often than not, we also end up having them for breakfast the next morning. Because, what’s a popsicle if not just a frozen smoothie?

Because we’ve been making them so often, I have started putting them in handy little popsicle bags, so that the mold is always free for our next batch. Coming next, avocado fudgesicles!

Creamy Strawberry Banana Popsciles
Ingredients
1 cup frozen strawberries
1 frozen banana
1.25 cups full fat coconut milk
~.25 cup oatmilk or water to thin
Instructions
- Blend or process all ingredients.
- Add to popsicle molds.
- Freeze for 2 hours, or until hard.
