Gremolata is an Italian condiment. It is sometimes called a green sauce, but is really more solid than that. If you have ever sprinkled parsley on the a dish at the end for a pop of color and flavor, gremolata is kind of like that, except with way more flavor. In my house we use it to top pasta, tacos, and especially sprinkled over any kind of roasted potato or vegetable. You can throw it on any kind of grain bowl or leftover and it completely transforms something that is otherwise a little lackluster. The lemon zest and fresh parsley work together to wake up any dish that just needs a little something extra. Gremolata does not last long over here.

If your little eaters are not in to shoveling down forkfuls of spinach just yet, green condiments like that are a great way to introduce green things that don’t feel quite as scary. You can give them a separate little bowl to sprinkle on their food if they want. A big win is just having them smell the gremolata and maybe even feel the texture with their hands. You could have them sprinkle it from one small bowl to another if they’re not ready to put the gremolata on their food. In the mean time, when they see you enthusiastically enjoying it, that goes a long way.

Gremolata
Ingredients
1 small bunch parsley
1 clove garlic
2 lemons
¼ teaspoon salt
Instructions
- Wash and dry parsley.
- Peel garlic.
- Wash lemons.
- Chop parsley.
- Grate garlic.
- Grate lemon zest.
- Chop everything all together.
- Season with salt.
