This soup is such a fun and delicious way to introduce new vegetables. In our house, we like to call this soup the most beautiful soup in the world. It’s such a vibrant pink/purple! I highly recommend a large dollop of sour cream on top with some yummy crusty bread for dipping. If you are uncertain about how this soup will go over, make sure to have a safe food served along side (one of their preferred fruits, chicken nuggets, or extra bread and butter). They might surprise you and dunk in a slice of bread for a taste if they feel like there is going to be something they can eat no matter how they feel about the soup. Taking the pressure off can help them feel calm, relaxed, and exploratory.

Purple Soup
Ingredients
½ red onion
1 medium potato
1 inch fresh ginger
1 cup red cabbage
2 Tablespoons butter
½ teaspoon dried thyme
¼ teaspoon dried rosemary
1 teaspoon salt
½ teaspoon black pepper
4 cups vegetable broth
1 cup canned beets
¼ cup sour cream (garnish)
French bread for serving and dipping
Instructions
- Peel and dice red onion half.
- Wash, dry, peel, and dice potato.
- Peel ginger (see note) and grate with a microplane.
- Shred cabbage (see note).
- Melt your butter in a large, heavy bottomed soup pot.
- Add your onion and cook over medium-low heat until softened (5 minutes).
- Add your potato, ginger, thyme, rosemary, salt, and pepper. Stir to coat vegetables in herbs.
- Add your broth. Stir and heat over medium heat until your soup is simmering (see note).
- Add your beets and cabbage. Simmer for around 20 minutes or until potatoes are softened.
- Ask for a grown up to help puree soup with an immersion blender or in small batches in your blender. Be careful of the hot liquid!
- Serve with bread and a dollop of sour cream.
Notes
- Peel ginger with the side of a spoon. Scrape down the skin with the edge of your spoon head and you will be amazed at how easily it comes off. This is a great task for young kids, because you don’t even have to pull a sharp peeler.
- Shredding cabbage is a great job for your food processor. I usually go ahead and shred the whole head and then safe the rest for salads, topping sandwiches and tacos, or a lovely, acidic coleslaw to round out a meal.
- Simmering is when you see small bubbles popping continuously on the surface of your liquid.
- Soup is also yummy topped with croutons or roasted nuts/seeds.
