These little tarts remind me just enough of a chess pie to hit that caramel-y flavor I love, but with way less baking time and a super simple ingredient list. This is a great recipe to get your kids in the kitchen! They can help stir up the filling, crack eggs, cut out the pie circles, and, of course, eat! These are a great treat to bring to parties or family gatherings, and your little ones will be so proud to tell everyone they helped make this delicious snack.

Dollop on some whipped cream, and everyone will think these are bakery quality butter tarts!
Mini Butter Tarts
Ingredients
1 package refrigerated pie dough
2 eggs
1/2 cup brown sugar
1/2 teaspoon salt
1/2 cup honey
2 teaspoons white vinegar
4 Tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 375*F.
- Spray a 12 cup muffin tin with cooking spray.
- Use a 4” round cookie cutter to cut out circles of pie dough. Press each circle into a muffin tin well.
- Combine your eggs, brown sugar, salt, honey, vinegar, melted butter, and vanilla in a medium bowl.
- Pour filling into each pie crust. Fill 2/3 the way.
- Bake 20 minutes or until filling is mostly set with only a slight jiggle In the center.
