Blue Cheese Veggie Dip

This recipe came from our color themed week. We had blue corn tortillas, blueberry pancakes, and we whipped up this easy blue cheese dip for a snack throughout the week. We loved it with hearty crackers and crudités, but you could easily use it as a cream cheese spread on bagels or a cucumber sandwich. Because this will most likely be a new flavor for your little one, make sure to include something that is well loved like their favorite brand of cracker, bread triangles, or a favorite crunchy vegetable.

I love how similar this dip is to ranch dressing. This allows for exploration of a new flavor, while still feeling comfortable and familiar. The texture is much thicker than bottled ranch dressing, so if you’d like it thinner, add a few tablespoons of milk until you achieve the desired consistency.

For added buy in, I had my kids peel carrots from our garden. We loved exploring the different colors and flavors of the rainbow carrots. They don’t always love raw carrots, so this activity was a great way to instill positive feelings about carrots.

Blue Cheese Veggie Dip

Ingredients

1 8oz package full fat cream cheese (softened)

2 green onions (optional)

1 cup full fat sour cream

1/2 cup blue cheese crumbles

½ teaspoon garlic powder

½ teaspoon dried thyme

½ teaspoon dried dill

1 teaspoon salt

¼ teaspoon black pepper

A favorite thing to dip. Ex: crackers, snap peas, baby carrots, mini naan, etc. 

Instructions

  1. Scoop cream cheese from package into a medium bowl. Set cream cheese out on the counter to soften for 15 minutes. Recipe can be made without doing this, but it makes it easier to mix.
  2. Using scissors, thinly slice dark green portion of green onions into bowl with cream cheese.
  3. Add sour cream, blue cheese, garlic, thyme, dill, salt, and black pepper to cream cheese bowl. 
  4. Using hand mixer, mix on low speed until mostly mixed. Switch to high speed and blend until creamy. 
  5. Serve with your favorite things to dip.
