Gluten Free Yeasted Overnight Waffles

There is something so wonderful about waking up to fresh batter in the fridge. No cracking eggs or mixing twelve ingredients before the coffee is ready. I like to whip up the batter just before I tidy the kitchen after dinner. That way, I’m not making much more mess, and I can throw all the waffle dishes in the dishwasher before bed. Clean kitchen and hot waffles are the secret to a happy Katie.

I have recently rediscovered my love for yeasted breads. It seems a lot more complicated than it actually is. I have not ever had a batch of yeast die on me mid recipe. Don’t be intimidated! If you have an instant read thermometer, this is the perfect time to whip it out. Just make sure your milk is around 110*F and you are good to go. If you don’t have one, it should feel similar to very warm tap water. Too hot to comfortably touch. Just be careful not to scald your milk. I like to heat mine in a small heavy bottomed pot. The microwave works well for this too, if you don’t have room to wash another pot.

We couldn’t decide exactly what these tasted like. My husband decided the golden brown exterior and creamy middle felt similar to grilled cheese, but without the cheesy flavor, obviously. I love the flavor that comes from a yeasted bread. There is nothing else like it. If you won’t take my word for it, just know this is the most enthusiastic approval I’ve gotten from my husband for any breakfast food. Ever. It’s going into our regular rotation.

I used the Great Value brand gluten free blend. I want my recipes to be as budget friendly as possible, and that is the best, cheaper gluten free blend I have found thus far.

Ingredients

1/2 cup warm water (110F-115F)

1 package active dry yeast

1 teaspoon sugar

2 cups warm whole milk (110*F-110*F)

1/2 cup melted coconut oil

2 eggs, beaten

2 cups gluten free flour

1 teaspoon salt

Instructions

  1. Add warm water to a large bowl. Sprinkle packet of yeast over the surface and stir lightly to dissolve. Stir in sugar and let sit for 5 minutes.
  2. In a medium bowl, mix warm milk, melted coconut oil, and eggs. Add flour and salt and stir to combine. Do not overmix. Add to yeast mixture and stir until just combined.
  3. Cover and refrigerate overnight.
  4. Cook waffles in a preheated, greased waffle iron until golden brown.
