Fresh Squeezed Lemonade

I am in denial that it’s still cold here in Colorado. I’ve put most of our winter clothes in storage under the beds, gone to parks and playgrounds under-dressed, and made this fresh squeezed lemonade outside with Eloise last week. Has winter had it’s last stand? Am I free to soak up the sun a la Sheryl Crow?

Spoiler: it may snow a foot this week.

When you can’t have actual summer, make your own! This lemonade is like summer in a cup. It’s refreshing and an antidote to my winter blues. It’s a perfect activity for little ones to help. They can cut lemons, squeeze the juice, stir, and measure. It’s a little on the tart side, so if you like super sweet lemonade, add more water or sugar.

Fresh Squeezed Lemonade

Ingredients

For the simple syrup:

1 cup white sugar

1 cup water

For the lemonade:

1 cup lemon juice

3 cups cold water

Instructions

  1. Add sugar and water to small saucepan to make simple syrup. Heat over medium.
  2. Simmer until sugar has dissolved and set aside to cool.
  3. Stir together simple syrup, lemon juice, and cold water.
  4. Taste and adjust water and sugar.
