I am in denial that it’s still cold here in Colorado. I’ve put most of our winter clothes in storage under the beds, gone to parks and playgrounds under-dressed, and made this fresh squeezed lemonade outside with Eloise last week. Has winter had it’s last stand? Am I free to soak up the sun a la Sheryl Crow?

Spoiler: it may snow a foot this week.

When you can’t have actual summer, make your own! This lemonade is like summer in a cup. It’s refreshing and an antidote to my winter blues. It’s a perfect activity for little ones to help. They can cut lemons, squeeze the juice, stir, and measure. It’s a little on the tart side, so if you like super sweet lemonade, add more water or sugar.
Fresh Squeezed Lemonade
Ingredients
For the simple syrup:
1 cup white sugar
1 cup water
For the lemonade:
1 cup lemon juice
3 cups cold water
Instructions
- Add sugar and water to small saucepan to make simple syrup. Heat over medium.
- Simmer until sugar has dissolved and set aside to cool.
- Stir together simple syrup, lemon juice, and cold water.
- Taste and adjust water and sugar.
