It’s thawing here in Colorado. The snow drifts are melting, the sun is shining through the haze, and tulips are popping up all over my flowerbeds. Did Easter get anyone else in the mood for all things spring?
I spent part of the weekend spring cleaning the basement, and I found at least 5 things for which I have been hunting for several months. It felt so nice to organize and store away things we won’t need for another 6 months. There is something so wonderful about the changing of the seasons. A fresh start. Washing the mud from our snow boots and storing them away, putting the winter coats in the cedar chests, and swapping out thick wool socks for spring shorts has my spirits lifted so high.
My husband is preparing the garden with compost. I can’t wait to put in our little sprouts. This is my first year starting vegetables from seed, and I am bursting to see if anything will actually grow. Eloise has dedicated ten minutes every day to meticulously squirt each little sprout with her spray bottle and watch the thirsty soil soak up the water like a sponge. All the little sprouts look the same, but I am hoping that is normal. Only time will tell. Having two kids under 5 “helping” with planting makes things a little wild.

This pizza fit my mood perfectly. Nothing screams spring like asparagus and pesto. I love how creamy the hummus makes the pizza, and it was a refreshing change of pace from the usual marinara.

Spring Naan Pizza
Ingredients
1 bunch young spring asparagus (look for small tender stalks)
1 pint cherry tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons olive oil
1 cup hummus
1/4 cup pesto
2 cups shredded mozzarella cheese
4 pieces naan bread
Instructions
- Snap sturdy ends off asparagus until only tender ends remain. You’ll remove a little less than half of each stalk, just until the asparagus starts to bend easily.
- In heavy bottomed skillet (I used cast iron) heat olive oil over medium high heat. Add asparagus, cherry tomatoes, garlic powder, and salt to skillet. Cook until tomatoes are soft and burst slightly and asparagus is blackened and soft. Set aside.
- Preheat broiler on high.
- Mix together hummus and pesto. Spread mixture on naan bread. Top with cheese and vegetables.
- Broil pizzas on high until cheese is melted and bread is slightly toasty.
