This past week, we busted out my daughter’s real porcelain tea set she got from my mom for Christmas. When any of her granddaughters become old enough to play with it responsibly, my mom gives them a beautiful, working tea set. We set it aside after Christmas, and Eloise has been asking daily when we will have a tea party with it. For some reason, she was most excited about the platter for treats. We decided to make a special treat for our party to put on the little platter. Due to the surplus of lemons we have this week, we decided to make lemon donuts. Add in a little thyme to elevate the flavor profile, and we had some fancy, tea party worthy treats.

These donuts were a hit! They are soft, fluffy, and packed with flavor. My husband loves lemon desserts, and my favorite part of the party was when Eloise remembered that and suggested we save him one. So sweet. I usually want more lemon flavor in desserts, but this recipe has a good punch of lemon from the zest. Make sure you don’t skimp on it! We left a few unglazed, and those were also perfectly delicious. If you aren’t eating them that same day, I recommend leaving a few unglazed, so they won’t be too mushy the following day.

Gluten Free Lemon Thyme Donuts
Ingredients
Donuts
1 cup all purpose gluten free flour (I used King Arthur)
1/4 teaspoon salt
1/2 cup sugar
1/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon dried thyme
1 egg
1/2 cup dairy free milk (I used pea protein milk, unsweetened)
2 Tablespoons oil (I used avocado oil)
2 teaspoons lemon juice
2 teaspoon lemon zest
1 teaspoon vanilla extract
Glaze
1 cup powdered sugar
1 Tablespoon lemon juice
1 teaspoon of dairy free milk
Instructions
- Preheat oven to 400. Grease donut pan.
- In a medium mixing bowl, stir together flour, salt, sugar, baking powder, baking soda, and thyme.
- In a large mixing bowl, whisk together egg, milk, oil, lemon juice, lemon zest, and vanilla.
- Add dry ingredients to wet. Try not to over mix.
- Cut a hole in the corner of a gallon ziploc bag, and add the batter. Pipe into your donut pans and bake for 10 minutes, or until baked through.
- While donuts are baking, mix together ingredients for glaze. If you like, divide in two and add natural yellow dye to one half of the glaze.
- Once donuts cool completely, dip into white glaze. Drizzle yellow glaze over top.
