Easy Skillet Chicken Tikka with Cauliflower

We are moving…again. This has been the year of many things, and for the True family, it has been a year of moves. I am hoping to not have to do this again for a very long time. Or at least not until we can easily swing movers. Thankfully we just moved around the corner this time, instead of across the country, but it still involves countless trips back and forth, chaos scattered in every room of the house as we try to cram all of our belongings into a new space, and a bored toddler and preschooler running underfoot. Needless to say, I am exhausted, and with Christmas looming, I have zero brainspace for menu planning.

This dinner was a lifesaver last night. It is nothing revolutionary, but it was utterly delicious. We’d been moving and cleaning all day, and I was worn out. It’s so simple, satisfying, and much cheaper than take out. The cauliflower is like a sauce sponge and takes on the flavor of the tikka masala sauce. Cauliflower is a vegetable I am learning to love, so this is a win in my book!

This sauce can be used with most combos of meat and vegetables, but I love the chicken tender-cauliflower combination. I will be keeping a jar of this on hand for quick meals in the future. Serve with whatever grain you have in your pantry. I like brown rice pasta or white rice.

This would be a great meal starter for anyone you need a last minute gift for! I would love to get a jar of this with a head of cauliflower and box of noodles. So convenient for a quick holiday season meal before going to look at Christmas lights. Who doesn’t love a dinner shortcut? I would also drop this off for a family with a new baby. This sauce is mild enough for most eaters, even my one year old gobbled it up.

Ingredients

1 jar Maya Kaimal Tikka Masala Sauce

1.5 pounds chicken tenderloins

1 small head cauliflower

2 Tablespoons oil for browning (I like avocado)

1 box brown rice pasta

Instructions

  1. Cook pasta according to instructions. Set aside.
  2. Cut chicken and cauliflower into bite sized pieces.
  3. Lightly cook on medium high heat. Add sauce and simmer until cooked through and cauliflower has softened.
  4. Serve on top of noodles.
