Turkey Taquitos

These taquitos are a great way to shake up your Thanksgiving leftovers. We always seem to use up the dark meat first, so I freeze the breasts. The addition of mayonnaise keeps the white meat moist in these crunchy, crispy taquitos. The spice is a welcome new flavor profile from the standard Thanksgiving flavors. Serve that day or re-crisp in the oven with a little oil spread on top.

Ingredients

Taquitos

1 cup cooked turkey, diced

1/2 cup mayonnaise

1/2 tsp cumin

1/2 tsp chili powder

1/2 tsp garlic powder

12 corn tortillas

12 toothpicks

Cooking spray (I like Chosen Foods avocado oil spray) or 2 Tablespoons avocado oil

Instructions

  1. Preheat oven to 425 degrees.
  2. Warm tortillas in microwave under damp paper towel until softened.
  3. Mix together cooked turkey, mayonnaise, and spices.
  4. Place 2 Tablespoons of mixture into corn tortilla. Roll and secure with a toothpick.
  5. Spray or brush tortilla with avocado oil.
  6. Bake 10-12 minutes, or until lightly browned and crispy.
  7. Serve with salsa and/or guacamole.
