These taquitos are a great way to shake up your Thanksgiving leftovers. We always seem to use up the dark meat first, so I freeze the breasts. The addition of mayonnaise keeps the white meat moist in these crunchy, crispy taquitos. The spice is a welcome new flavor profile from the standard Thanksgiving flavors. Serve that day or re-crisp in the oven with a little oil spread on top.

Ingredients
Taquitos
1 cup cooked turkey, diced
1/2 cup mayonnaise
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder
12 corn tortillas
12 toothpicks
Cooking spray (I like Chosen Foods avocado oil spray) or 2 Tablespoons avocado oil
Instructions
- Preheat oven to 425 degrees.
- Warm tortillas in microwave under damp paper towel until softened.
- Mix together cooked turkey, mayonnaise, and spices.
- Place 2 Tablespoons of mixture into corn tortilla. Roll and secure with a toothpick.
- Spray or brush tortilla with avocado oil.
- Bake 10-12 minutes, or until lightly browned and crispy.
- Serve with salsa and/or guacamole.
