Review of Kerbey Lane Gluten Free Pancake Mix

We are in the middle of moving, so I have not been in the kitchen as often as I like to. One thing that has been a saving grace is trying out some new gluten free, dairy free mixes. It’s an easy cooking activity for me and my toddler, while keeping to clean up to one bowl and one cooking pan.

We’ve had this Kerbey Lane Gluten Free Pancake mix for a few months, and it seemed like the perfect time to test it out. Kerbey Lane is a diner in Austin, Texas that we absolutely love. They have everything from Texas Avocado Toast Benedict to their famous lemon poppy seed gluten free pancakes. Kerbey Lane is a staple in Austin, and our family has gone many times and always been blown away by the yummy food. When I saw this Cinnamon Apple Gluten Free Pancake Mix at our local HEB grocery store, I knew we needed to test it out.

The base for the pancakes is sorghum flour, which I have a soft spot for. I love the flavor and the variety of applications it can be used for. It’s wonderful for pancakes and breads. It gives these pancakes a lovely nutty flavor.

The cinnamon flavor is quite strong and the smell while they are cooking is heavenly. It is a little stronger than I wanted, and the apples weren’t as prominent as I hoped. The mix spread well and created thin, dense pancakes that were a little chewy.

Overall, I would probably not buy this mix again. It was yummy, but not worth the added price tag from mixing up my own cinnamon apple pancakes. I’d prefer fresher, lighter cinnamon and fresh apples.
