Summer has officially hit here in Houston. This means two things: First, if we don’t go outside before 10AM, we don’t go outside. Second, it’s popsicle season!

If you haven’t made your own popsicles before, it can be intimidating, but I promise it’s just as easy as making a smoothie. You simply put that smoothie into the freezer. There are limitless combinations, and we try different kinds regularly.

I love making my own popsicles, because I know there’s no weird food dyes or flavors, I can make flavors that are more interesting than simply “grape”, and it’s an easy way to involve my toddler in a fun, low stress activity in the kitchen.

We had frozen peaches substituted for mango in our grocery delivery a few weeks ago, and I’m not mad about it. We’ve had frozen peaches plain as a great cold snack after playing outside, warmed on top of our waffles, and now in our popsicles! If you haven’t tried frozen peaches, I highly recommend.

I think my toddler’s favorite part of these are the “surprise” peach bits she finds throughout.

Peaches, Berries, and Cream Popsicles
Ingredients
2 cups frozen, sliced peaches
1/2 cup frozen strawberries
1/2 cup coconut cream
1 cup oatmilk
2 Tablespoons honey (optional)
Instructions
- Slice 1 cup frozen peaches into small pieces (small enough not to be a choking hazard for your kiddo) and set aside.
- Place other cup of frozen peaches and the rest of ingredients into blender or small food processor. Blend until smooth.
- Spoon blended mixture into popsicle mold, adding diced peaches as you go so there are bits throughout.
- Freeze 4-8 hours, until frozen.
