My little girl turned 3 today. We had a narwhal-themed party over the weekend with extended family and a few friends. If you have not read the Narwhal and Jelly series by Ben Clanton, I highly recommend those books. They are sweet and funny, and they always have a good message about friendship and being yourself. The first one is Narwhal: Unicorn of the Sea.

We made a narwhal-themed cake, narwhal pinata, narwhal balloons, and jellyfish hanging from the ceiling. We had games like pin the tusk on the narwhal, and mermaid necklace making was planned, but the girls ended up just playing together the whole time.

I still have not landed on a gluten-free, dairy-free cake recipe that I love. The search continues. This one was mediocre. Too dense. The frosting, however, was excellent.
To eat, because you know I am more invested in the food at an event than anything else, we had a make-your-own waffle bar. For those of you who have not come across the Narwhal and Jelly books, Narwhal only eats waffles . . . that is until he discovers peanut butter. I have entirely too many waffle makers for one house, so it was perfect. I made a big batch of batter and we had a variety of toppings for party-goers to choose from. We had warm strawberries and blackberries, chocolate chips, peanut butter, coconut whipped cream, and sprinkles. Guests got to choose from making a traditional Belgium-style waffle, a zoo animal shaped waffle, or a Texas shaped waffle. Like I said…way too many waffle makers.

This gluten free waffle batter is my favorite. We have tried countless variations of flour and milk combinations to get here, and now I am sharing it with you!
Gluten Free Dairy Free Confetti Waffles
Ingredients
1 3/4 cup Pillsbury Gluten Free All Purpose Flour Blend
1 teaspoon salt
1 Tablespoon sugar
2 teaspoons baking powder
1 1/2 cup full fat unflavored oatmilk
2 eggs, beaten
1/4 cup avocado oil
1 teaspoon vanilla
2 Tablespoons sprinkles (we used some similar to these dye-free ones)
Instructions
- Mix all dry ingredients in medium bowl.
- Mix all wet ingredients in large bowl.
- Slowly add dry ingredients to wet. Mix as little as possible, just until large lumps are gone.
- Pour batter into greased waffle maker. (I like this avocado oil spray) Cook until lightly browned.
- Top with warmed frozen strawberries, peanut butter, or classic butter/maple syrup options.
