Homemade Fruit Popsicles

Here in Texas it is almost summer and officially HOT. We have until about 10am, then it’s inside time until the late afternoon. However, I have a rambunctious, energetic toddler that needs plenty of physical activity during the day. This is why we’ve started spending as much time as possible at the pool or beach. During this most recent beach trip, we stopped at a little gourmet popsicle shop across the street from the beach when we were hot, tired, and ready to go home. They were such a perfect end to the day that it inspired me to start making my own. If we do need to get outside during a Texas summer, they are a perfect way to take a little break and cool off.

 

This has been our go to flavor because it is SO EASY. Y’all. This is the easiest popsicle recipe on the internet. The possibilities are endless. You can use any fruit you have lying around and change it for your family’s preferences. I used frozen strawberries and blueberries for this recipe, but we’ve also used mango, mixed berries, peach, coconut milk, and even beet (recipes to come). You can use fresh, I usually use frozen because they are cheaper and it doesn’t make a noticeable difference.

Strawberry Blueberry Popsicle

I placed whole blueberries at the very top, but you could layer them throughout or blend them up with the strawberries for a nice lavender color. I used a mini popsicle mold, because it is about all my two year old can eat before getting a brain freeze and they have been the perfect snack size for me as well. I also love this  “>large silicone one.

This recipe is super simple and pared down. Most you’ll find these days have some sort of juice or added sweetener, but I find it wholly unnecessary with the natural sweetness of the fruit.

Homemade Fruit Popsicles

  • 2 cups frozen strawberries
  • 1/2 cup frozen blueberries
  • 1/2-1 cup water

Place strawberries in a high speed blender or food processor. Add 1/2 cup of water to start, using more to get a smooth consistency. You want it similar to a thick slushy.

Place 2-3 blueberries in each popsicle mold. Pour in the strawberry mixture, making sure the blueberries are surrounded and the mold is filled to the top.

If using a mold with a built in stick, place lid and stick on and put into the freezer for 2-3 hours. If using traditional wooden stick, freeze for 20-30 minutes and then insert popsicle stick and return to freezer for 2-3 hours.
